Instructions:
Preheat your oven to 350°F (175°C).
Rinse the lamb riblets and pat them dry with paper towels.
Drizzle a bit of olive oil over the riblets, then season them generously with salt, pepper, and your choice of seasonings or herbs. Massage the seasonings into the meat to ensure even flavor.
Place the seasoned riblets on a baking sheet lined with aluminum foil or parchment paper. Make sure they are in a single layer and not overcrowded.
Roast the lamb riblets in the preheated oven for about 45 minutes to 1 hour, or until they are tender and the internal temperature reaches your desired level of doneness. You can use a meat thermometer to check the temperature; for medium-rare, aim for around 135°F (57°C).
