Instructions:

Preheat the Oven:

Roast the Porchetta:
Place the tied pork loin on a roasting rack set inside a roasting pan. Roast in the preheated oven for about 1.5 to 2 hours or until the internal temperature reaches 145°F (63°C). Use a meat thermometer to check the temperature.
Rest and Serve:
Once the porchetta roast reaches the desired temperature, remove it from the oven and let it rest for about 15-20 minutes. This allows the juices to redistribute.
Slice and Enjoy:
After resting, remove the kitchen twine and slice the porchetta roast into thin pieces. Serve it with your favorite sides, such as roasted vegetables or a simple salad.
